Zesty Grilled Peach & Burrata Salad​

 

Summer is all about fresh, vibrant flavors, and this Grilled Peach & Burrata Salad is the perfect way to celebrate the season. Juicy, caramelized peaches meet creamy burrata, fresh basil, and a drizzle of honey balsamic glaze for a dish that’s as beautiful as it is delicious. Quick to throw together but guaranteed to impress, this dish is ideal for warm days, al fresco dining, and those long, lazy summer evenings.

Ingredients:
  • 2 ripe peaches, halved and pitted

  • 1 tablespoon olive oil

  • 1 ball of burrata cheese

  • 1 handful of fresh basil leaves

  • 2 cups rocket (or mixed greens)

  • ¼ cup toasted walnuts or pecans (optional)

  • 1 tablespoon honey

  • 2 tablespoons balsamic glaze

  • Salt & black pepper, to taste

Instructions:
  1. Brush the peach halves with olive oil and place them on a hot grill/BBQ or grill pan. Grill for about 2-3 minutes on each side until they’re caramelized and have beautiful grill marks. Remove and let cool slightly before slicing.

  2. Arrange the rocket or mixed greens on a plate. Tear the burrata gently and place it in the center. Add the grilled peach slices around the burrata.

  3. Scatter fresh basil leaves and toasted nuts over the top. Drizzle with honey and balsamic glaze, then season with a pinch of salt and black pepper.

  4. Serve immediately with some crusty bread or as a side to your favorite summer BBQ dish!
